Profil Makro Nutrisi Rumput Laut Kappaphycus alvarezii Dari Provinsi Kalimantan Utara

Abstract

Seaweed is an important commodity in the aquaculture sub-sector in North Kalimantan Province. The type of seaweed commodity cultivated is Kappaphycus alvarezii. Kappaphycus alvarezii can be used as a raw material for processing nutritious food because of its macronutrient content. This study aimed to determine the macro nutritional profile of Kappaphycus alvarezii from North Kalimantan Province. Data were analyzed descriptively. The results showed that Kappaphycus alvarezii from North Kalimantan Province contained 31.53-27.73% carbohydrates, 4.79-7.98% protein, 0.13-0.17% fat, and 1.46-1.59% crude fiber, amino acids 3.13-4.06%, and fatty acids 14.26-17.91%. Kappaphycus alvarezii can be used as a source of nutritious food.
